Master Salt Maker from Kochi
Tanoya Enjiro’s “Completely Sun-Dried Salt”

Tanoya Enjiro, a master salt maker in Tano Town, Kochi Prefecture, produces unique, custom-made salt. With around 4,000 orders pending and a wait time of over four years, his salt is highly sought after.

In Japan, most salt is made by filtering seawater through machines and boiling it in kettles to evaporate moisture. However, Enjiro’s salt is produced without any heat or electricity—only sunlight and ocean breezes naturally crystallize the salt, creating his “Completely Sun-Dried Salt.”

By using this gentle method, the salt retains all its natural nutrients, is rich in minerals, and closely matches the mineral balance of the human body. This allows the salt to provide a natural umami flavor while also helping to restore mineral balance in the body.

Why Kochi Prefecture?

Tanoya Enjiro’s salt is produced in the lower reaches of the Nahari River in Tano Town, located in eastern Kochi Prefecture.
Tano Town is a small community with a population of about 2,400 people. Due to its pristine environment, the sea remains clean, and the Nahari River carries rich nutrients from the mountains into the ocean. This location allows the perfect balance of fresh and seawater, creating superior salt compared to those made solely from seawater.

Enjiro’s completely sun-dried salt is made to order, with customized taste, crystal size, and texture for each client.
The salt’s sodium, calcium, and potassium levels, as well as its shape, size, and dissolving speed, are all precisely controlled, making it truly one of a kind.

Through months of careful adjustment, a special salt was created to perfectly complement PACKN-TO’s onigiri.

2009 Established himself as “Tanoya Enjiro”
2009 His signature salt was selected as the “World’s Most Delicious Salt”
2016 Won the Grand Prix (Japan’s Best) at the 1st “Nippon no Takaramono Collaboration Grand Prix Japan Tournament” and later received an Excellence Award at the World Championship
2016 Recognized as a “Treasure Person” contributing to Nippon no Takaramono
2019 Won the Grand Prix in the “New Experience Innovative Category” at the 2019 Nippon no Takaramono Japan Tournament and also secured the overall Grand Grand Prix title
2023 Won the Grand Prix in the “Industry Transformation Category” at the 2023 Nippon no Takaramono World Championship
